          Just made this delicious and refreshing green juice with plenty of fresh greens. It's just wonderful, feels so cleansing! Felt like keeping it green this time and left out the beets and carrots.

I used:

Cup of green tea
Cilantro
Half a cucumber; peeled
Kale
Celery (with leaves)
Wheat grass
Parsley
Cabbage
Green beans

What's For Dinner






Made fajitas with portobello mushrooms instead of chicken or meat. I must say, they were quite tasty! 

I used:

Chopped onions
Chopped green, red, and yellow bell peppers
Chopped portobello mushrooms
Vegetable broth, about 1/8 cup (for extra taste)
Sea salt to taste
Garlic powder to taste
Flour tortillas
Fresh & Easy mild salsa (Pace dupe)
Cilantro

Caramelize onions in olive oil, add bell peppers, mushrooms, seasoning, and vegetable broth; cover. Cook until mushrooms are tender. Serve on flour tortilla (make sure to use a draining spoon so the broth drains out) with salsa and cilantro on top.

Lemon Water


 Every morning, before eating anything, I have a lukewarm cup of lemon and raw honey water to wake up my body. Has to be lukewarm so it's the same temperature as my body and doesn't shock it since it's the first thing I drink. It aids in detoxing, and, in my experience, suppresses appetite. I don't take it for the latter, but for detoxing and because it is just pure comfort. I also give it to my nieces when they have a cold and it helps with their cough and sore throat. I add 1/4 of a lemon to 1 cup of lukewarm water, and a tsp of raw honey. I use local honey (YAY, local).

Sunday Haul


I thought this was the coolest thing, it has potting mix attached!


Vegan cheese. Haven't tried it yet but I'm excited to. Can't find casein-free cheese anywhere so far so I'll be having this one instead.


 This counts as a haul, right? Not really a beauty haul, but a haul that I believe technically is appropriate for a vegetarian's blog, right? Yes? 
 I love incorporating raw foods into my diet more than anything else that I've added to it. I blame raw foods for giving me healthy, glowing skin. At the moment, I'm enjoying a drink that I made with warm water, fresh ginger, lemon juice, and raw honey. Absolutely delicious, much better than ginger tea. Well, if you're a ginger lover like I am. Speaking of ginger-loving, Trader Joe's has these wonderful ginger chews that I highly recommend.

Saturday grocery shopping and dinner.

Went grocery shopping at Sprouts today and found so many goodies at great prices. I've heard so many people say that buying healthy food is too expensive but I've found it's the opposite. I bought a cilantro bunch (for juices and bean stews) for 34 cents. How could I possibly beat that? Also picked up fresh organic wheat grass for $1.49. Made a juice with it as soon as I got home with a base of green tea, very refreshing! For dinner I just had one of my favorite dishes that my mom has been making me since I was a little Sonia. It's very simple and very fast to make. I have tweaked it a bit to make it more healthy (coconut oil instead of butter) and vegetarian friendly (she adds chicken boulion).

Recipe:

1/8 of an onion, chopped
1 small tomato, chopped
2 medium zucchinis, cut into cubes
Muenster cheese (or your fav vegan cheese)
Coconut oil
1/8 cup vegetable broth (this is the substitute for chicken boullion)
sea salt to taste

On low medium heat, add coconut oil to pan,  add onions and saute; once they've caramelized, add tomatoes. Once tomatoes are a little mushy, add zucchini, broth, and a little sea salt. Cover and simmer on low heat till zucchini is soft. Turn off heat and uncover; add cheese on top. Serve once cheese has melted using a draining cooking spoon. I don't do that however, because I serve over brown rice and I like the excess broth on my rice. Yum! Sounds simple but it's so delicious. The recipe might be enough for 2, but I like a big serving of it.

Fresh Vegetable Juice




This is my favorite juice to make. Not only is it delicious (well, to me) but It's loaded with vitamins and is a great way to get your daily serving of vegetables. I also prefer my veggies raw so I really really enjoy this. Ingredients are:

A cup of green tea (this is the base. I don't have room for a juicer so I just use my blender and strain.)
1/2 beet cut into pieces 
1 celery stick
7 baby carrots (just easier for my blender)
Slice of cabbage
Hand full of butter lettuce
Dill
Parsley
Cilantro
Ice

Juice or blend.

Only thing you taste in this is beets and carrots. I love it! I have it every single day. Best to have in the morning or mid day, not at night because of the caffeine in the green tea (fine if you use decaf).
